Soul food is a variety of cuisine originating in the Southeastern United States, and from African American culture.

It is all about making something out of nothing. And that something is often branded as unhealthy but soul food evolves and leaves room for experiments and creativity just as any other cuisine.

It is a myth that soul food is not healthy. On a closer look at the ingredients used in soul food, it is seen that it can be just as healthy as it can get.

And it can be so without compromising on its distinctive flavours.

Case in point are the collard greens. This recipe shows how adaptable soul food can be. It can be made with any kind of meat or without and even vegan!
