Inspired by yoshoku-ya, a Japanese restaurant specializing in Western-influenced Japanese cuisine, Shirley Karasawa has come up with a mouth-watering potato salad recipe.
This came after much due diligence in trying to re-create the dish she so loved.
Unlike German-style potato salad, the Japanese version is much like mashed potatoes.
With ingredients like mayonnaise (Japanese Kewpie recommended), rice wine vinegar, cucumber, a little onion and carrots, the dish gives a lovely tangy flavour.
The secret ingredient? A Japanese spicy mustard called karashi.
